In claim set up have an option to set up all claims to pay to provider, only a manual option at this point.

In the Office Manager \ Maintenance \ Practice Setup \ Preferences.. there is a section for Default Signature on File for New Subscribers, where you can default the Assignment of Benefits. if this is not the setting you are looking for, we are happy to help if there are other details to your request.
